To celebrate the autumnal season, Inox Dine situated in Sheffield University’s students’ union building, is serving up a special meal at an event which focuses on the very best of locally sourced game.
Game can be a little intimidating to the first-timer but the restaurant hopes that by inviting diners to learn more about where its game is sourced, how it is reared and how best to cook it, it will encourage more people to choose this lean, healthy meat.
Head chef, Joe Berry, a Master Chef of Great Britain, created the exclusive country inspired menu and will be showcasing venison from nearby Round Green Farm in Worsbrough.
He explains: “It’s our first collaboration with Round Green Farm to learn more about this magnificent animal and it has given me a real understanding and insight into the exceptionally high welfare standards at the farm and how this reflects in the quality of the meat. It’s also enabled me to work confidently with the products knowing how they have been reared and the level of dedication to their welfare.
“The people at Round Green Farm are proud of their animals and I want to reflect that level of pride on the plate. I’ll be showcasing different elements of the animal in the menu.”
Diners will enjoy the following menu at the Inox Dine Game Night:
- Soy and lime glazed breast of pheasant with sesame pak choi and a confit pheasant leg nikuman dumpling.
- Barbecue haunch of Round Green Farm venison with braised venison faggot and venison bacon, fondant potato, cocoa nib, kale and a medlar jus.
- Apple and pear crumble with a hazelnut streusel, pickled blackberries and a salt caramel ice cream.
